Healthy Crunchy Cucumber Salad


I just love this salad at the moment. It’s crunchy, fresh and super healthy too!

This salad packs a punch and can stand proudly on its own, or be paired with just about anything. You really don’t have to be a health nut to give this one a try.


Ingredients – Serves 4 as a side

  •  16 baby pickling cucumbers –  sliced horizontally
  • 2 large handfuls of sprouts
  • 3 spring onions – roughly sliced
  • 2 ripe avocados – halved and skinned – use a spoon to scoop out the avocado flesh
  • Nut/seed mix – sunflower seeds, pecan nuts – roughly chopped, salted peanuts- chopped in half, sesame seeds, poppy seeds, and pumpkin seeds, mustard seeds


Vinaigrette – Whisk together

  • 3 parts sunflower oil
  • 1 part filtered apple cider vinegar
  • ½ tsp. crushed garlic
  • Salt and  lots of black pepper to taste

Recipe –

  • Place the cucumbers slices on a plate
  • Sprinkle over the spring onions
  • Arrange the avocados halves around the plate
  • Place the sprouts in a pile in middle of the salad
  • Roast the nut mix in a dry pan, until just golden and popping, watch carefully so that they don’t burn
  • Add the a good pinch of salt and pepper to the nut mix
  • Sprinkle the nut mix over the salad
  • Just before serving, pour over the vinaigrette
