Lentil And Tuna Salad With Capers, Herbs And Lemon Vinaigrette

IMG_7945Yip, it’s a new year and with that comes some serious adjustments to the diet. After a December of indulging, which is totally necessary in my option. It’s time to get back on track and by this I mean low fat, healthy meals. This salad is perfect as it’s low GL which means it will keep you fuller for longer. I have always loved lentils, however they do need a good amount of sprucing up to entice the eater. This salad is a wonderful combination of lemony, herby and crunchy. The lentils have a gentle crunch while the lemon vinaigrette really packs a punch. The fresh mint and basil not only provide a pop of green to the salad but also explode in your mouth with freshness. The big flakes of tuna brings a brininess to the salad, perfect to compliment the earthy taste of the lentils. It’s a real winner of a salad and it’s super easy too. Ingredients –  Serves 4

1 cup of lentils – washed
2- 3 small red onions- sliced into half moons
1/4 cup of chopped mint
1/2 cup chopped basil
1/2 cup pitted olives- chopped
2 tbsp capers
1 cup of cherry tomatoes – halved
2 tins of tuna – drained

Lemon Vinaigrette –
1/4 cup olive oil
2 lemons squeezed –  1/3 of the oil mixture should be lemon juice
3 garlic cloves – crushed
1 tbp wholegrain mustard – optional
1 chilli finely chopped – optional
1/2 tsp salt
1 tsp cracked black pepper

Taste and adjust seasoning if necessary


Recipe –
Cook the lentils in boiling water until just tender. Drain and wash under cold water to cool them down. While the lentil are cooking chop all the ingredients and make the vinaigrette
Place the cooled lentil in a bowl
Add the herbs, tomatoes and onions
Add the capers and olives
Add the tuna
Mix the vinaigrette
Pour over salad and mix

Dee’s notes
Try to keep the tuna in largish chunks
You can add some feta or goats cheese
Try any combination of herbs
Leave out the tuna and eat as a side dish to grilled fish or chicken
